INGREDIENTS

12 lasagna noodles

1 tablespoon olive oil

1 cup chopped onion

2 cloves garlic, minced

1 lb lean ground beef

1 jar (24 ounces) marinara sauce

1 teaspoon dried basil

1 teaspoon dried oregano

2 cups ricotta cheese

2 cups shredded mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

1 large egg

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped, fresh parsley

INSTRUCTIONS

1. Preheat your oven to 375 degrees F (190 degrees C), and grease a baking dish lightly.

2. Cook the lasagna noodles in a large pot of boiling, salted water until al dente. Drain, and rinse with cold water to prevent sticking.

3. In a large skillet over medium heat, heat the olive oil. Add the onion and garlic, and cook until the onion is translucent. Add the ground beef to the skillet, breaking it up as it cooks. Once the beef is brown and cooked through, stir in the marinara sauce, basil and oregano. Reduce heat to low, and simmer for 10 minutes.

4. In a medium bowl, combine the ricotta cheese, 1 cup mozzarella cheese, 1/2 cup Parmesan cheese, egg, salt, pepper and parsley.

5. Lay the cooked lasagna noodles out, and spread about 3 tablespoons of the cheese mixture evenly over each noodle. Roll each noodle up, and place, seam side down, in the prepared baking dish.

6. Pour meat sauce over the lasagna roll ups in the baking dish. Sprinkle the remaining mozzarella and Parmesan cheese over the top.

7. Bake in the preheated oven for 25 to 30 minutes or until the cheese is bubbly and golden. Let stand for 5 minutes before serving.
